New-style seafood paella

3tbsp olive oil
4 cloves garlic, finely chopped
Pinch chilli flakes
Pinch turmeric
300g paella rice
Bunch spring onions,sliced
900ml hot light fish or vegetable stock
3 tomatoes, peeled, deseeded and chopped
125g fine asparagus, sliced
200g baby courgettes
100g fresh shelled peas
300g raw peeled prawns
Small bunch parsley, roughly chopped
Small bunch mint, roughly chopped
Zest and juice of 1 lemon
6 large cooked shell-on prawns, to garnish

1. Method
2. Heat oil, garlic, chilli and turmeric in a large frying pan or paella pan and cook for 1 min.
Add rice and onions and cook for 2 mins, stirring, until the rice is well coated. Pour in two-thirds of the stock and reduce the heat to a gentle simmer for 10 mins, stirring occasionally until most of the stock is absorbed.
Add the chopped tomatoes, vegetables and remaining stock. Cook for a further 5-10 mins until the rice still has a little bite to it and the vegetables are just tender.
Stir in the peeled prawns and cook for 3 mins or until cooked through. Season with salt and freshly ground black pepper.
Just before serving, stir through the herbs and lemon zest; garnish with prawns and squeeze over the lemon juice.
