Red cabbage (roedkaal)

1 small red cabbage
25g unsalted butter
Duck fat
1dl vinegar
1dl red currant juice (ribssaft)
1/2 dl water
1 tsp salt
sugar to taste

T. Preparacion → 5 min

T. Cocinado → 60 min

1. Remove the outer leaves from the cabbage and slice finely without the stalk.

2. Put the cabbage in a pan and include the rest of the ingredients - excluding the sugar, Simmer over a low heat for about 1 hour until the cabbage is soft. Leave the lid half on half off at the beginning of the cooking process to avoid a bland looking cabbage.

3. Add sugar to taste.

4. OPTIONS/VARIANTS:
Add a bit of finely chopped apple, some finely chopped white onions and/or some apple juice to add a hint of sour sweetness to the dish.

5. Serve with prok roasts, roast duck, frikadeller or fried sausages such as Cumberland, medister or bratwurst.
