Red chicken 'stew'
Receta porPack of chicken Thighs and a pack of drumsticks too
3 Red Peppers, diced and blended
1 jar of Bolognese Sauce ( its just so much quicker with it! )
1 large onion, diced
1 clove of garlic
1 heaped tablespoon of curry powder
1 scotch bonnet pepper ( preferably the orange or red ones! , but if this isn't possible, good old chilli flakes and chilli powder will do! ) blend it with the red peppers.
CAUTION! Please take extra care when handling these peppers, as they are very hot. Chop with gloves, if not then please wash your hands after handling and do not touch your face during and not before washing!
1 cube of chicken bouillon
optionals
1 pack of okra or lady's fingers
1 pack of runner beans
T. Preparacion → 10 min
T. Cocinado → 50 min
1. Dont be fooled by the 'stew' in the name, Im not sure as to why i started calling it the stew but it im now stuck with it. Its spicy and so so flavoursome, and one of my family's favourite meals!
2. Boil the chicken. Add some salt and a pinch of hot chilli powder
3. When the chicken is cooked, drain them and keep some of the remaining stock.
4. Brown the chicken in a pan, and set aside.
5. In a large saucepan, fry the onions and garlic till soft
6. Then add the pepper mix, and fry for 5-7 minutes
7. Add the browed chicken into the mixture and coat well with the mixture
8. Add the bolognese sauce, and the chicken stock cube
9. Add the vegetables if you are using it!
10. Let it cook with the lid off for about 15 minutes and let it thicken
11. Serve with coconut rice, or basmati rice or rice and peas! Enjoy
