Sausage and bean casserole
Receta por400g sausages (pork and leek maybe?)
2 onions chopped
3 leeks sliced
1 tsp fennel seeds
200ml red wine
1 x 400g cherry toms
2 x 400g cans barlotti beans or butterbeans
1 tbsp olive oil
2 tbsp red wine vinegar
1 tsp sugar
2 tbsp fresh parsley chopped
2 garlic cloves minced
1. Heat casserole pan over medium heat
Add olive oil and fry sausages until brown
Remove sausages and set aside (optional, chop into inch long pieces)
Add chopped onions and fry until clear
Add leeks and fry for 10 mins or until they start to brown
Add garlic, fennel seeds and red wine
Simmer until reduced by half
Return sausages to the pan with drained beans and simmer for 15-20 mins
Add wine vinegar and sugar and parsley
Stir and serve with parmesan shavings
