Sri lankan chicken curry

500 g chicken breast
1 big onion, chopped
2 tomatoes, chopped
3 glover garlic, crushed
1 green chilli, finely chopped
12 curry leaves
250 ml coconut milk
150 ml water / chicken stock
1 tsp mustard seeds
1 tsp fenugreek seeds
1 tsp cumin seeds
3 sm ginger, grated
1/2 cinnamon stick, crushed
4 cloves, crushed
juice of 1/2 lime
2 tbsp vegetable oil

FOR CHICKEN MARINATE
2 tbsp chilli powder
1 tbsp curry powder (or roasted curry powder)
1/2 tsp turmeric powder
1 tbsp soy sauce
1 tsp salt
1 tsp blach pepper

T. Preparacion → 120 min

T. Cocinado → 45 min

1. Cut chicken into small cubes, add spices and marinate for 30 min - 1 hour.

2. Heat oil in a sauce pan, add mustard seeds, fenugreek seeds, cumin seeds and fry until mustard seeds start popping.

3. Add cloves, cinnamon, ginger, garlic and onion and fry until the onions are brown.

4. Add green chilli and curry leaves and fry for a little bit more.

5. Add tomatoes, mix and simmer under cover for 5-7 minutes.

6. Add marinated chicken, water and simmer for 15-20 minutes.

7. Add coconut milk and simmer for another 10 minutes.

8. Add juice of 1/2 lime and serve hot.
