Strawberry Banana Bread de Kaly Bree - Recipefy

2 cups of all purpose flour ( 2 cups = 500 ml ) - Note if you are using all purpose flour add 1 teaspoon of bicarb of soda + baking powder OR just 2 cups of self raising flour, so much easier

170g of UNSALTED butter

2 large eggs

3/4 cups of brown sugar (187.5 ml of sugar )

1 teaspoon of vanilla extract

3/4 teaspoon of ground cinnamon

1/4 teaspoon of salt

1/4 cup of buttermilk / plain yoghurt / soured cream ( 62.5 ml )

3 medium sized bananas, mashed

approximately 1/2 cup of diced strawberries

3 thinly sliced strawberries for ''garnishing''

T. Preparacion → 20-30 min

T. Cocinado → 60 min

1. okay so like me you guys aren't too friendly with the oven when it comes to baking, dont worry this recipe is soooooo sooooo easy, and the results are amazing! i found this recipe of my good friend's blog, so .. ready steady go!
Oh and preheat your oven to about 180 C and grease your baking pan - i just used some baking parchment.

2. First, melt the butter. We need to melt it till its BROWNED.
I had nooo idea there was a difference but the give away is with the smell. It has a kinda nutty smell, and it is sort of like 'tanned' coloured. This website helped me in explaining what it was - http://simplyrecipes.com/recipes/how_to_brown_butter/ there's pictures and all so have a good old read
.So i melted the butter in a small saucepan over medium heat, it did take a little bit of time, and required constant whisking. When this is browned, place it on the cooling rack to cool down a little bit.

3. In a large mixing bowl, mix the 'dry ingredients' together, ie - flour, sugar, cinnamon, salt, and if your using the baking soda, add that too - Then whisk!

4. In a separate bowl, mix the 'wet ingredients' together. So that means, add the 2 eggs, buttermilk / yoghurt / soured cream, vanilla extract.

5. Then when that is all mixed lovingly, add the mashed bananas, and cooled browned butter and WHISK!

6. 4. Add the 'wet mix' into the 'dry mix' and FOLD.
To best describe folding is to use a big spatula or spoon, and move across the bottom of the bowl, come back up on the other side and fold in the mixture from the bottom to the top of the surface.
Keep turning your bowl so you work your way around, do this quickly but lightly. Don't stir, beat or whip cos you wanna maintain the volume of the batter (usually to keep the air pockets in the whipped/beaten egg mixture).

7. 5. Then add the strawberries and again FOLD

8. 6. Pour the mix into the pan ( make sure you get every single little bit of it! ) and top if off with your strawberry garnish!

9. 7. Ideally for it to have that bread ish structure you'll need to let it be in the over for 1 hour, but for a cake-y structure, only do it for 50 minutes!
