stuffed squash with fair trade rice and quinoa

6 small acorn squash, halved and seeds removed
1 cup Fair Trade Rice, cooked to instructions on package
1 cup Fair Trade Quinoa, cooked to instructions on package
Zatoun Olive Oil
4 green onions, chopped
½ cup chopped celery
1 tsp dried sage
½ cup dried cranberries
_ cup dried apricots, chopped
_ cup walnuts, chopped
½ cup orange juice
Salt to taste

T. Preparacion → 15 min

T. Cocinado → 25-30 min

1. � Preheat oven to 350F.
� Brush squash with olive oil and place cut side down on baking tray. Bake until tender, 25-30 min.
� Heat 2 tsp olive oil in heavy skillet. Add onions, celery and sage; cook 3 min.
� Add fruits and nuts. Cook, stirring often, until heated through.
� Fluff rice and quinoa with a fork and add to skillet. Add orange juice and cook until heated. Season with salt as desired.
� Spoon filling into squash and serve
