Summer cake

8 oz Self Raising Flower
4 oz Soft Dark Brown Sugar
4 oz Butter
8 oz Mixed Fruit
1 oz Cherries
2 oz Ground Almonds
1/4 pt Water
1 egg (beaten)
Pinch of Salt
1 teaspoon Mixed Spice
T. Preparacion → 45 min
T. Cocinado → 90 min
1. Put water, sugar, fruit (not cherries) + butter in a saucepan, simmer for 30 mins.
2. Add flour, salt, mixed spice, cherries, almonds and egg.
3. Stir Well.
4. Put in 1lb loaf tin and cook at 325'F for 1 1/2 hours (or until done)
5. You can easily turn this into a christmas cake by layering white marzipan over the top and sides, delicious! Double the ingredients for a 2lb loaf tin or round 8 inch cake tin.
6. Enjoy!
