Sweet and sour pork and szechuan green beans

1. *** Set the rice to cook at the start (I recommend using a rice cooker)
2. Step 1 - Marinate the Meat
I use pork chops (You can also use chicken if you like too)
Wash the pork chops, and cut them up into small pieces. Put some corn flour into 1 bowl, and a beaten egg into another bowl.
a) Sprinkle a tiny bit of salt and pepper onto your cut up meat.
b) Dip the meat into Egg
c) Then place in the corn flour bowl, make sure you cover every bit with the flour.
d) Re-place floured meat into the egg, then again into the corn flour to make a thicker batter. (You can repeat this process several times, depending how how much batter you want to create. I find 2 to 3 times is okay.)
At the end of this process you want the meat pieces to be quite dry, so be generous with the cornflour.
3. Step 2 - Deep Fry the Meat
a) Heat the oil until it's Hot, (you can test it by putting a tiny piece of pork into the oil, if it starts bubbling straight away then, the oil is ready)
b) Place the meat into the oil (I use a small saucepan) and fry for a few minutes, remembering to turn the meat around to ensure it's cooked all over. (Tip: I use a long pair of wooden chopsticks, to place the meat in, and turn it).
c) When it turns to a deep brown colour it should be ready. Drain the meat, and you can test it by cutting into it, the meat should be white of colour, i.e. no pinkness. (Place the cooked meat in a warm oven to keep warm. Place it on a raised rack so any oil can drip off.)
4. Step 3 - Sweet and Sour
a) Add 1 Table spoon of oil in a pan
b) Add sliced Peppers, stir fry for few minutes
c) Add Pineapple chunks and the Juice, Sugar, some Ketchup (YES ketchup) and then 1 table spoon of corn flour mixed with some water to thicken the sauce.
d) When you are happy with the taste, pour on top of the fried pork.
5. Step 4 - Szechuan Green Beans
a) Wash a the green beans, cut off both ends (if that hasn't been done already)
b) Peel a clove or 2 of Garlic, smash and finely chop
c) Finely chop a chilli (You can also use dry chilli flakes as well)
d) Add a spoon of Sunflower oil to a pan / wok, and heat for 30seconds
e) Add the finely chopped garlic
f) Throw in the beans, and the Chilli, stir fry for a few minutes.
g) Just before it's ready, throw in some sesame seeds and cook for a futher 5 - 10 seconds.
h) Place in a bowl, and you can add a pinch of Sea Salt flakes.
6. Sweet And Sour Pork, and Szechuan Green Beans Ready! - Ho May! (Which means "Tasty" in Cantonese)
7. I usually garnish with some Japanese rice toppings to add a bit of colour.
