Tomato sausage casserole

10 sausages
5 garlic cloves
pack of 9 or 10 tomatoes
6 bay leaves
basil
olive oil
splash of balsamic vinegar
pepper

1. Pour a drizzle of olive oil onto the baking tray.

2. Add tomatoes to the baking tray.

3. Cook tomatoes at 180oC for about 5 or 10 mins or until the skins are easy to remove.

4. Pull the skins of the tomatoes. Squish up the tomatoes with a fork in the baking tray until its almost like a sauce but still kind of chunky.

5. Spread out the garlic cloves onto the crushed tomatoes.

6. Add the bay leaves and basil.

7. Brown the sausages on the grill.

8. Add the sausages to the tomato mix.

9. Cook for 45 mins at 180oC, turning once and adding a splash of balsamic vinegar half way through.

10. Serve with crusty bread or fries.
