Vegetable skewers
Receta por10 -15 medium potatoes
60ml olive oil
salt and freshly ground black pepper, to taste
250g baby marrows
250g mushrooms (white button mushrooms work fine)
handful of fresh herbs, chopped
T. Preparacion → 20 min
T. Cocinado → 50 min
1. Preheat oven to 200C
2. Cook potatoes in salted water until just done. Drain and quarter them
3. Drizzle a little of the oil over potatoes and season with salt and pepper
4. Roast for 40min until crisp
5. Halve baby marrows lengthways. Also halve mushrooms
6. heat remaining oil and fry baby marrows and mushrooms for a few minutes until just done
7. season with salt, pepper and herbs
8. threat potatoes, baby marrows and mushrooms onto skewers
9. serve with a dip of your choice
