Vishu kalan/mampazha kalan
Receta por1. Ripe Mango-1 cut into cubes
Cucumber-1 small or 1/2 cup cut into cubes
Turmeric powder-1/4 tspn
Salt
2. Grated coconut-1/2 cup
Black pepper corns-1/4 tspn
Dry red chilli-1
Green chilli-1
Cumin seeds-1/4 tspn
3.Thick curd-1/2 cup
4.Coconut oil-1 tspn
Mustard seeds-1/4 tspn
Fenugreek seeds-1/4 tspn
Dry red chilli-1
Curry leaves-few
T. Preparacion → 5 min
T. Cocinado → 10 min
1. Cook mango and cucumber by adding turmeric powder,salt and little water.Cook till the cucumber pieces become transparent.(this indicates
that it is cooked well ).
2. Meanwhile,grind together all the ingredients listed under "no 2" adding little water.Grind to a very smooth paste.Then mix together curd and this coconut paste.
Mix realy well without any lumps.
3. When the mango and cucumber are cooked well,add this coconut-curd mix to it( simmer the flame before adding ).Then keep the flame to lowest and cook till the curry is just about to boil.Immediately
switch off the flame.
4. In another pan heat coconut oil and splutter mustard seeds and fenugreek seeds.Add dry red chilli and curry leaves.Pour this tempering into the kalan and mix well.
