Amaretti di Elaine Crawford Daguanno - Recipefy

4 eggs
2 cups sugar
3 tbsp almond extract
3 tbsp cocoa powder (optional)
3 tbsp flour
1 tbsp baking powder
2.2 lbs (1 kilo) with their skin on, ground fine**
1/2 cup icing sugar for coating cookie dough
** Raw almonds NOT roasted with their skin still on and freshly ground at home in a food processor will result in better tasting cookies than store bought ground blanched almonds.

Preparazione → 45 min

Cottura → 12 min

1. 1. Beat first 6 ingredients.
2. Add the ground almonds using all if possible.
3. Form small balls coating them with icing sugar and placing on baking sheet with parchment.
4. Bake at 350 F for 12 minutes.
5. I used a Pampered Chef medium meatballer (1/2 scoop) and a little zive to shake icing sugar off and make them round.
