1 and 3/4 c all-purpose flour
2 tsp cornstarch

1. 1. Place butter in a medium sauce pan and heat over low-medium heat. Allow the butter to melt and then begin to continually whisk it. Watch it carefully. The butter will begin to bubble and foam and brown specks will form in the pan. Once the butter turns an amber-brown color with specks (about 6 minutes), remove it from the heat and let cool.
2. 2. Using a mixer, cream the brown butter with the sugars on medium until light and fluffy. Mix in egg and vanilla. Scrape down the sides as needed. On low speed, mix in flour, cornstarch, baking soda and salt. Stir in the pretzels and M&Ms. Dough will be thick and sticky. Chill for at least 1-2 hours or up to 3 days. (I actually skipped this step and they still turned out fine!)
3. 3. Preheat oven to 350F. Line a baking sheet with parchment paper or a silicone baking mat.
4. 4. Roll balls of dough with your hands or cookie scoop and drop onto the cookie sheet. Make for 8-9 minutes, until barely golden brown around the edges. Remove and let them cool for 3 minutes on the cookie sheet.
