Cauliflower and parmesan soup
Ricetta di1 Large Cauliflower cut into florets
1 Large Onion
2 Cloves Garlic
A knob of butter or splash of either olive oil or rapeseed oil
60g Parmesan or Grana Padano Cheese
800 ml Milk (semi skimmed is fine)
Preparazione → 10 min
Cottura → 30 min
1. Chop onion and garlic add to large saucepan with the butter or oil and fry until softened over a medium to low heat - about 10 mins.
2. Add the cauliflower florets and the milk and bring to the boil. Once boiling, turn down to simmer until the cauliflower is soft, About 20 minutes.
3. Add the Parmesan and allow to melt.
4. Season with salt and white pepper.
5. Put the soup in a blender and blitz until smooth.
6. Garnish with chopped chives and serve with either fresh crusty bread or melba toast with grilled parmesan.
