Chicken caesar salad recipe
Ricetta di2 romaine lettuce,torn into pieces
200g cherry tomatoes
600g chicken breast fillets
200g streaky bacon
2 cups croutons, garlic flavoured
100g Parmesan shavings
100ml olive oil
salt and black pepper to taste
Caesar Dressing
1 egg yolk
1 clove garlic, crushed
2 tbs lemon juice
1 tsp Dijon mustard
3 anchovy fillets, canned and drained
100ml olive oil
salt and black pepper to taste
Preparazione → 10 min
Cottura → 20 min
1. Brush chicken fillets with olive oil, season with salt and pepper and grill until cooked through, about 10-15 minutes.
2. Cut bacon into small pieces and fry in oil until crispy.
3. Slice chicken thinly and place in a large salad bowl with bacon, lettuce, tomatoes and garlic croutons.
4. Toss with Caesar dressing and serve with a garnish of parmesan shavings.
5. To prepare Caesar dressing place egg yolk, garlic, lemon juice, mustard and anchovies in a blender and mix until smooth.
6. Gradually add oil and continue blending until dressing thickens.
7. Season with salt and pepper to taste.
