Deluxe grilled cheese with bacon

1. In a bowl, combine the cheddar cheese, cream cheese, Dijon, salt and pepper. Stir in the crumbled bacon.

2. Heat a skillet over medium heat. Butter the outsides of each slice and bread. On 4 of the slices of bread, spread the cheese mixture on the un-buttered side. Top with another slice of bread, buttered side out. Cook each sandwich on the skillet until the bread is toasted and the cheese is melted. Serve with Cafe Zupas’ Creamy Tomato and Lentil Soup.
