Easy couscous salad
Ricetta di1/2 tsp sea salt
2 tbsp virgin olive oil
1 small onion finely chopped (about 1/2 cup)
1 large garlic clove, finely chopped
1 tomato (Cut into small cubes)
1/2 small zucchini cut into small pieces
1 tbsp chopped fresh parsley leaves
black pepper to taste
1. Heat olive oil in a skillet - saute onion, garlic, tomato, and zucchini with sea salt to taste.
2. Cook over moderately high heat stirring often until vegetables are tender (3-4 minutes).
3. Stir in parsley and pepper, remove skillet from heat and stir vegetables into prepared couscous.
4. *I often add Tilapia when cooking the onion, garlic etc. and serve as a main dish*
