1kg readymade dough
few green olives, halved (optional)
extra flour to roll out
80g butter
3-4 cloves garlic, finely chopped
30ml finely chopped Italian parsley
salt and freshly ground black pepper

Preparazione → 15 min

Cottura → 10 min

1. Prepare BBQ over which to bake the bread. Grease a large mixing bowl with oil.

2. Knead the olives into the dough, if using, and put the dough in the bowl. Using your hands, lightly coat the top of the dough with oil and cover with clingfilm. Leave the dough to rise for about 40min then knock it down.

3. Divide it into 6-8 equal size balls and leave them to rise for another 20min. Roll out each ball of dough on a floured work surface.

4. Heat the butter and fry the garlic for a few minutes. Add the parsley and season with salt and pepper. Put the flat loaves on a BBQ grid and braai them over low heat. Drizzle with the garlic butter when done.
