Green rice pilaf
Ricetta di2 tsp veg oil
155g/5oz long grain white rice
1/4 onion finely chopped
2 fresh poblano or anaheim chillis, roasted peedel seeded chopped (optional)
6 spring onions
1 clove garlic
1/4 tsp salt
1/4 tsp ground cumin
440ml chicken stock
185g/6oz cheddar cheese grated
4 tbsp coarsely chopped coriander
Preparazione → 15 min
Cottura → 20 min
1. Preheat oven to 190c.
2. Heat oil in large frying pan. When hot, add rice.
3. Cook and stir for 2 minutes or until opaque.
4. Add onion and cook for one minute. Stir in chillies, spring onions, garlic, salt and cumin. Stir and cook for half a minute.
5. Stir in stock, bring to boil then simmer for 15 minutes until rice is tender.
6. Stir in 125g of cheese and coriander, then transfer to greased baking dish and top with remaining cheese.
7. Bake uncovered for 15 minutes.
8. *Plain green rice version can be made by omitting the cheese and the baking.
