Jambalaya
Ricetta di175g easy-cook rice
150g (spicy) sausage
1 red pepper
1 onion
1 tablespoon of olive oil
1/2 teaspoon of mild chilli powder
2 teaspoons of tomato puree
100g cooked peeled prawns
a clove of garlic
a large pinch of ground ginger

1. 1. Cook the rice according to instructions on paquet. Meanwhile, chop the sausage and pepper into bitesized chunks. Chop the onion finely.
2. Put the oil into a large pan and heat it over a medium heat for about 30 seconds. Add the sausage and cook for 4-5 minutes.
3.Add the onion and crushed garlic into the pan. Cook for 4 minutes. Then add the pepper and cook for 4 more minutes.
4. Stir in the ginger and chilli powder and cook for another minute, until the peppers soften. Then stir in 2 tablespoons of water, a little salt and pepper, the tomato puree and the prawns.
5.Turn the heat down low and put the lid on. Cook for 3-4 minutes until everything is piping hot.
Tip. You could add a sliced, uncooked chinken breast at step 2, and a handful of frozen peas at step 4.
