Lentil burgers
Ricetta diMakes 4
800g canned brown lentils
1 clove garlic
2 green shallots, chopped
2 tsp ground cumin
1/4 cup finely chopped mint leaves
1/4 cup dried, pitted dates, chopped
1 egg, lightly beaten
sea salt and pepper
1/4 cup panko breadcrumbs
Buns
Spinach
Cucumber
Carrot
1/4 cup Greek yogurt
1/2 cup mango chutney
Preparazione → 15 min
Cottura → 15 min
1. Put lentils in a colander and rinse under cold water runs clear
2. Put 1/2 the lentils in a food processor and pulse until a smooth paste forms. Transfer to a large bowl
3. Put remaining lentils in processor with garlic, shallot, cumin, mint, date and egg. Process until a course paste forms. Season with salt and pepper.
4. Mix both lentil pastes and mix with breadcrumbs
5. Divide mixture into 4 equal patties and shallow fry in 5mm of oil in a pan for 5 minutes per side or until golden.
6. Toast buns with butter side down and top with patty and toppings.
