Rich coconut tartlets
Ricetta diPASTRY....4oz S.R.Flour
2oz Margerine
1oz Caster Sugar
Water
FILLING... 50g [2oz] margerine
50g [2oz] Caster Sugar
50g [2oz] Dessicated Coconut
1, Egg [medium]
4 x 15ml spoons Jam or lemon curd.
[4 tbsp]
Preparazione → 20 min
Cottura → 20 min
1. Pastry ..... 1,Rub s.r.flour and margerine together.
2. 2. add caster sugar mix together .
3, then add enough water to bind together.
3. 4, Roll out with a pastry cutter into rounds place in bun tray.
5, Cream margerine and caster sugar together. add the coconut
and egg and mix together.
4. 6, Place half a tsp of jam or lemoncurd into pastry case and 1
tsp of the mixture on top of the jam.
5. 7, Cook at Gas Mark 4 or 180 C. 350F until the sponge is risen and
golden brown.
