Roasted spaghetti squash with caramelized kale and red onions in marina sauce
Ricetta di
1 large spaghetti squash
Handful of Kale
Half of a Red Onion
Garlic
Onion & Garlic Powder
Sugar
Olive Oil (Truffle Oil preferred)
Salt & Pepper to taste
Parmesan cheese
1. Preheat oven to 425
Cut the spaghetti squash in half removing the seeds
Coat with oil, salt & pepper, onion and garlic powder
Cut 1-2 cloves of garlic in half
Place the spaghetti squash face down with garlic halves underneath
Cook for 35-45 mins, or until fork tender
2. Cut red onion into slice
Saute in oil salt and pepper for a few mins
Add chopped kale removing the stem
Sprinkle sugar when there's a few mins left to saute (this will depend on how soft or crisp you want your veggies)
3. Remove squash from over
Fork out and combine with onions and kale
Add home made or jarred marina sauce
Sprinkle Parmesan cheese
