Vegetable curry sw
Ricetta di1 large onion – chopped
1 tspn paprika
2 cloves garlic – crushed
1 tspn cumin seeds
Fry light
1 tspn chilli powder (+/- to taste)
1 can chickpeas
½ tspn ground coriander
½ tspn turmeric
1½ tspn garam masala – add 2 minutes before the end of cooking
1 can chopped tomatoes
1 sm can garden peas
1 can red kidney beans in chilli sauce
2/3 carrots – sliced or cut into chunks
3 medium potatoes – cut into bite size chunks
1. Spray a wok or a large pan with fry light and stir fry the onions until golden. Add the crushed garlic and all the spices except the garam masala and fry for a further minute. Add the remaining ingredients, bring to the boil then simmer over a low heat until the vegetables are tender. Add the garam masala 2 minutes before the end of cooking.
2. Serve with boiled rice or couscous.
